Creamy Hazelnut Truffles For Easter

If you are looking for yet another decadent, creamy, gooey and slightly chewy choccy ball recipe, this one is a treat!

We ferment the dates to make them extra digestible, lower the sugar content and add probiotics, but it's totally optional!

Fermentation is a process where microorganisms, such as bacteria or yeast, break down carbohydrates into simpler compounds like alcohol and organic acids. This process has been used for centuries in the production of food and beverages, including fermented fruits. Dates are one such fruit that can be fermented to produce a variety of products such as vinegar, alcohol, and yoghurt-like products.

Ingredients

• 1 cup dried dates (soaked in hot water for 30 minutes or fermented for 24 hours)

• 3/4 cup hazelnut butter (or alternative)

• 1 tsp vanilla essence or paste

• 2 tbsp melted cacao butter

• 1 tbsp melted coconut oil

• 2 tbsp room temperature coconut cream

• 4 tbsp cacao powder

• 2 tbsp collagen (optional)

*Optional monk fruit drops to taste or 2 tbsp sweetener, especially if you fermented the dates as they have lost much of their sweetness

*Optional 1/2 - 1 tbsp of The Mothers Blend or The Children's Blend.

Method

Blend until smooth and creamy, then scoop out the mixture into a bowl . Pop into the fridge or freezer until the mix is firm enough to roll into balls and coat or top with anything you desire. Or leave them plain! Place back into  the freezer to keep firm and enjoy!
