This will quickly become a fuss free weekly, rotated staple, that is conveniently free from dairy, gluten and has the option to be nut free, too!
Ingredients
- 1 cup blanched almond meal (you may use all almond meal if you have no hemp seeds, or all hemp seeds for nut free)
- 1 cup hemp seeds
- 2 eggs
- 1 tsp baking powder
- 30g ghee, butter or coconut oil
- 350g ripe banana (approximately 3-4 medium to large bananas)
- 3 teaspoons cinnamon
- 2 tsp vanilla essence
- Optional: 2 Tbsps of honey
- Optional: 1/2 cup chocolate chopped or chocolate chips, blueberries or anything your audience loves.
Method
- Heat up your oven to 180 degrees.
- Line your muffin tray with additional oil or little baking cups, or otherwise use a bread tin and line with baking paper.
- Blend down the almond meal and hemp seeds. If you're just using almond meal, you can skip this step.
- Add in the remaining ingredients and blend until smooth and creamy.
- If Add to baking pan sprinkle with your choice of topping (blueberries, walnuts etc)
- Bake for 20-25 minutes for muffins, or 25-35 minutes for a banana bread, or of course until cooked through. You will know by gently pressing the centre and if it is still very soft to touch, then continue to wait!
- Enjoying these warm is ideal, but cold is also perfect!
