Welcome to your new weekly staple - 5 minute lollies, with the option to have them coupled with a little creamy goodness! We have had this recipe on repeat for a few years now. It is a brilliant snack, lunchbox filler, refreshing but deeply nourishing treat and an easy way to provide minerals to your little ones with sneaky doses of Foraged throughout their day. You may have seen them numerous times on our socials! You can make the recipe yours by mixing up the flavours and sneaky additions.
Note: do not overly heat the mixture that contains the Foraged, to ensure all of the nutrients (particularly the vitamin C which is heat sensitive) remain intact.

Foraged Juice layer
Ingredients:
- 2 cups pure, organic juice of choice. We use cloudy apple juice.
- 1/2-1 tbsp either The Children's or Mothers Blend
- 1 tsp vanilla essence
- 1 tbsp optional honey or alternative to taste. It is already very sweet with the juice, so this will depend on your audience! If you have a little one, try go as long as possible without introducing extra sweetness.
- 5 Tbsp gelatine
Method:
1. Blend together the chosen Foraged blend with 1 cup apple juice, the sweetener of choice and vanilla.
2. Set the mixture aside.
3. Combine the gelatine and remaining cup of apple juice, and then melt it down either in a little saucepan or a thermomix. Consistently stir until melted down and you see no granules, but do not let it boil.
4. Remove from the heat, and allow to cool just slightly so it isn't absolutely scorching, then combine with the mixture with the Foraged in it simply by stirring them through together.
5. Stir liberally, but do not blend, as this will make the mixture frothy, and then pour into your choice of silicone moulds up until halfway if you’re adding the cream layer, or the full way for a complete foraged gummy.
6. This recipe amount will leave you some of this mixture without the coconut cream layer, so you can use some of this mixture to make up lollies that are completely juice/foraged gummies, without a coconut layer.
7. Place in the fridge until firm enough to add the optional coconut layer!
Vanilla Coconut Layer
Ingredients:
- 1 cup slightly diluted coconut cream (for this you can use 1/2 of the thick part of coconut cream, and then the rest water). This will depend on the consistency or thickness of your coconut cream, however you do not want it to all be the thick part of coconut cream!
- 1 tsp vanilla essence
- 2 tbsps optional honey or alternative to taste. The sweetness will depend on your audience!
- 2 1/2 Tbsp gelatine
Method:
3. Combine all of the ingredients in a little saucepan or a Thermomix. Consistently stir until melted down and you see no granules.
4. Remove from the heat, and ensure everything is combined really well. You could use a fork or whisk to combine it liberally! Allow to cool just slightly so it isn't absolutely scorching (you can even add a little ice-cube to speed this up!
5. Once the first Foraged gummy layer is mostly set, pour the coconut layer on top.
6. Place it all back in the fridge and wait until they are completely firm to touch.
7. Remove, and enjoy!
