We are in utter disbelief. Our childhood Sesame Snap dreams come true with a cheeky healthy twist. The standard contains sesame seeds, glucose syrup and sugar, these ones.. simple healthy ingredients that actually provide you and your little ones a whole heap of goodness.
Ingredients:
1 cup sesame seeds, we use activated sesame seeds.
3/4 cup honey
2 tsps vanilla essence
1 pinch of salt
Method:
1. Stirring consistently, toast the sesame seeds over a low-medium heated pan until they are golden. Stir them constantly as they can burn easily and you don't want that! Remove from the heat.
2. In a saucepan, add the honey, vanilla and salt and allow to simmer/boil for 10-15 minutes, also stirring regularly.
3. Pour the toasted sesame seeds in with the honey mixture and keep the heat on for another 2-3 minutes stirring everything through and allowing it to get a little more sticky.
4. Remove from the heat and allow to cool down slightly as it will be piping hot.
5. Lay out baking paper or a silicone baking mat and pop the mixture in the centre. Once it has cooled slightly, top it with another piece of baking paper or a silicone baking mat and using any type of rolling pin device, roll the mixture out until it is flat and as thin as you can make it.
6. Leave the mixture on the tray and, while it is still slightly warm, gently score it into squares using a sharp knife. Doing this before it fully cools will help prevent it from cracking when you cut it later.
7. Transfer the tray to the fridge and allow the sesame snaps to cool and set completely. Once firm, simply cut along the scored lines and enjoy!
