When every bite screams GIVE ME MORE and it's a salad, you know it's a good salad.
This salad isn't just for Christmas, it's for all times in the year but is particularly wonderful for those in warmer climates with the addition of OPTIONAL mango.

Sweet Mango Maple Wreath Salad
Ingredients

1/2 medium red onion, finely sliced

1 1/2 ( OPTIONAL) mangos, flesh only, diced into cubes

100g grams rocket

3/4 cup pecans

1 tablespoon maple syrup
-
100-120g goats cheese (decide the amount that suits you!)

1/2 cup dried cherries or cranberries, roughly chopped

1/2 cup chopped fresh dill
Dressing
-
1 tbsp seeded mustard
-
3 tbsp balsamic vinegar (a good quality one really helps here!)

4 tbsp olive oil
Method
1. Preheat your oven to 170 degrees celsius. Line a baking tray with baking paper, add the pecans, and coat the them evenly with the maple syrup. Allow them to bake for 12 minutes.
2. Remove from the oven and allow them to cool.
3. On your serving flat bowl or plate, add your rocket in the shape of a wreath as best you can. It helps if you add a circular item in the centre of the wreath so you can scatter the rocket and ingredients around it, then remove at the end.
4. In this order (it doesn't have to be, but it helps!) scatter across the rocket your onion, mango, goats cheese, cranberries, and then once the pecans are cooled, add them on top, too.
5. Follow with the dill, and now for the dressing.
6. Shake in a little jar all of the dressing ingredients, and then drizzle on top once you are serving.
7. Serve fresh, and of course it is best to ensure that each person has a generous serving of each delicious ingredient!
