Ingredients
Coconut Layer
- 1/2 cup coconut cream
- 3/4 cup water
- 1 tsp vanilla essence
- Sweetener to taste; such as 6 drops liquid stevia, 10 drops monk fruit drops or 1 tbsp maple syrup. You choose what works for you!
- 1 1/2 tsp gelatine
Mango Layer
- 1 cup mango
- 1/8 cup coconut cream
- 3/4 cup water
- 2 tsp vanilla essence
- Sweetener to taste; such as 6 drops liquid stevia, 10 drops monk fruit drops or 1 tbsp maple syrup. You choose what works for you!
- 2 tsps gelatine
Optional Cream
- 3/4 cup fresh cream, or alternatively, a thick coconut yogurt if you'd love dairy free.
- 2 tsp vanilla essence
- Sweetener to taste; such as 6 drops liquid stevia, 10 drops monk fruit drops or 1 tbsp maple syrup. You choose what works for you!
Method
Coconut Layer
1. Blend together the coconut cream, vanilla, water and sweetener of choice.
2. Add either into a small pot or your thermomix, and add the gelatine. Stir to combine. Gently heat it up to medium heat and stir consistently, it won't take long for the gelatine to melt/combine.
3. Do not let it boil or simmer! Remove from the heat, and allow to reduce in heat slightly. Pour into your choice of moulds up to half way, and then place in the fridge to set. This will take an hour(ish!).
Mango Layer
1. Blend together the coconut cream, mango vanilla, water and sweetener of choice.
2. Add either into a small pot or your thermomix, and add the gelatine. Stir to combine. Gently heat it up to medium heat and stir consistently, it won't take long for the gelatine to melt/combine.
3. Do not let it boil or simmer! Remove from the heat, and allow to reduce in heat slightly. Once the coconut layer has set, pour the mango mixture on top of the coconut layer and then place them back into the fridge to set. Again, this will take an hour(ish!).
Optional Cream
1. If your cream option requires firming up slightly, whisk with the vanilla and sweetener for roughly 1 medium on medium speed (you can beat this with your hand, in a thermomix, or alternative).
2. Do not over whisk! Keep a close eye to ensure it doesn't begin to seperate or go too firm.
3. Place a dollop onto each panna cotta and top with mango. If you have passionfruit, that would also be incredible and become even more festive.
