Sugar Free Vanilla + Strawberry Marshmallows
This recipe can be used as a sugar free alternative to marshmallows if you are in that season of your life. My honey sweetened version is below!
Strawberry Marshmallows:
Ingredients:
1/2 cup strawberries
1 cup water
2 tsp vanilla essence/extract
2 1/2 Tbsp gelatine
3 Tbsp your choice of granulated sweetener OR liquid sweetener drops to taste such as stevia or monk fruit.
Optional for a deeper pink colour and extra nourishment: 1-1.5 tsp The Mothers Blend or The Children's Blend
Method:
- Blend together the strawberries and water, and strain through a fine mesh strainer.
- Measure the strawberry and water liquid into 1 measuring cup, and then pop this into your saucepan or Thermomix.
- In a saucepan or Thermomix, combine the gelatin, vanilla, sweetener and strawberry water, allow to sit until the water is absorbed by the gelatin.
- Heat the saucepan to low heat, and then stir consistently until the gelatine has completely dissolved and it looks just like liquid. In the Thermomix, heat this to 80 degrees for 5-8 minutes or until completely dissolved.
- Remove from the heat, and allow to cool to just above room temperature.
- Add in your desired colour/flavours here, such as The Mothers Blend or The Children's Blend. Do not add after the mixture has been mixed as it will flatten your mixture!
- Place in a bowl and use an electric mixer with a whisk attachment, and whisk on low to medium speed for 15-20 minutes, or until it is quite really fluffy and has stiff-ish peaks when you dip your finger or spoon in. If you have a Thermomix, I blended it with the butterfly inserted, on speed 4, for 20 minutes. If the mixture gets warm, remove from the heat and allow to cool back down. The heat will begin to melt the gelatine again and not be as fluffy!
- Line a flat container or tray (thick enough for however thick you want your marshmallow) with baking paper, and then pour the mix in and smooth out with a spatula.
- Allow to cool only just slightly (if it became hot from all the blending) and place in the fridge to set, which may take less than 1 hour.
- Once it has set, use a hot knife and gently slice it into squares, and then demolish them!
