
Well, it's certainly OUR new favourite GF collagen brownie that exists on this planet. To us, it's nourishing to every crevice of your body and soul. You'll find the recipe to this and many other favourites of ours that we will be demolishing over the next few days. I hope you love them, and I can't wait to see what you try! Happy Easter x
Ingredients:
- 2 eggs
- 1/3 cup blanched almond meal
- 1 cup (loosely packed) your choice of chocolate. Brand examples include Gevity, Pana Chocolate, Loco Love)
- 1/3 cup coconut oil
- 1/4 cup your choice of granulated sweetener (or more to taste if you'd prefer).
- 1/4 cup collagen (optional, but great for additional protein!)
- 1 tsp vanilla paste, powder or 1 tsps vanilla essence
- 1/4 tsp baking soda
- Pinch of salt
Method:
- Preheat your oven to 180 degrees celsius.
- Gently, on a very low heat, melt down your coconut oil and chocolate, setting aside 1/4-1/3 a cup of it for topping the brownie before baking.
- Turn off the heat just before the chocolate is all melted and it will continue to melt with time from the heat residue. This is to prevent burning.
- Whilst that cools, whisk together the eggs and your choice of sweetener.
- Add to your choice of blender all of the ingredients and blend, or if you don;t have a blender, simply add it all to a bowl and combine well.
- Line a brownie baking tray with baking paper, and scoop the mixture into the tray. It is thick, and a spatula really helps!
- Top with all the leftover chocolate, and bake in the oven for 20 minutes, or until mostly firm to touch in the centre.
- Remove from the oven and enjoy! It is best served warm or at room temperature.
