Maple, Ginger and Cinnamon Cookies
Maple, Ginger and Cinnamon Cookie
If you're like me and love lots of flavour in one bite of cookie, this is for you! Add the flavour to taste, but I could have kept going. Enjoy!
Ingredients:
2 cups blanched almond meal
2 Tbsp ghee (may use coconut oil)
1 egg
4 Tbsp maple syrup
1/2 cup collagen
2 tsp vanilla essence
1/2 cup chocolate chips of choice.
Optional, but recommended: 4 tsps organic ginger powder, however you may want to add 2, and work up to 4 continuing to taste the mixture (or add more for extra spice - I love ginger, so 4 was GREAT for me), and 2-3 tsps cinnamon.
Method:
1. Preheat your oven to 180 degrees celcius.
3. Add into your blender all ingredients apart from the topping of choice, and blend. You will need to scrape down the sides and blend until well combined and the almond meal is slightly smooth.
4. Taste the mixture and ensure it is sweet enough for you or your audience, and if you're adding the ginger and cinnamon additions, then ensure you have added enough to taste.
5. Line a baking tray with baking paper. Add in the chocolate (leaving some to reserve to place on top), and gently stir through.
6. Remove a little dough spoonful (such as a tablespoon) and roll into a ball, then gently flatten just slightly, then place on the baking paper on the baking tray.
7. Bake for 8-12 minutes (we want them slightly soft!), remove from the oven and then let them sit until they are cool to enough to enjoy!
